I still have not been able to sort this out. Any suggestions greatly appreciated. :-)
The UK mod does not alter or change the PayPal IPN in anyway.
What shipping mod are you using to define your shipping costs and carrier?

Hi Kevin, I'm using out of the box PayPal IPN with the standard configuration and table rate shipping charges.
Have you set the postage and packing rates for the products?
Have you set the weight of the products?
No, I'm not using product weights and the individual items have not had any rates specifically applied. I'm using a sliding scale table rate based on the total amount of the order. Within the cart this works fine. When they click through to PayPal to make payment the the postage and packing is lumped into a total charge with the PayPal postage/packaging set to
This is something to do with the way ZC pushes the info to PP.
I've never really fixed this annoyance, maybe someone over in the main ZC forums can help out?
As it stands, if I were in your position I'd run with the fact that PP is taking the cash and your clients can get a breakdown from the invoice that ZC provides by default.
